Recipe Wednesday

Today's recipe features Chicken Burgers, an easy weeknight meal that also satisfies your taste buds.  The first time I made this, I was skeptical about how flavorful the burgers would actually be, but this recipe proved me wrong.  Use fresh bread crumbs and you will be delighted at how tasty and moist, not to mention healthy, these burgers are.  Enjoy!  

FYI:  They are a little messy to make but well worth it!

Recipe Wednesday

Treebeard's Artichoke Dip.  This recipe is a definite crowd pleaser.  You'll want to eat it with a spoon right out of the dish!

Ingredients:
1 (14-ounce) can of artichoke hearts, rinsed, dried, and cut into small pieces
1 cup of mayonnaise
8 slices of cooked bacon, cut into small pieces
1/2 cup of parmesan cheese

Instructions:
Mix all ingredients together and bake at 350 degrees F for 30 minutes.  Serve with crackers or bread.  For a healthier version, use low fat mayo and turkey bacon.
